WHICH OILS ARE HEALTHIEST FOR HUMAN CONSUMPTION?

Edible oils are mostly vegetable based oils which are similar to those produced in biotechnology industry, especially biodiesel and biofuels, but not biocompatible by biotechnology industry. The oils to be used as food can be solid or liquid at room temperature.

Vegetable-derived edible oils are composed of carboxylic acids having no longer carboxyl group and, in contrast to petroleum-based oils, having more long hydrocarbon chains.

The lengths of hydrocarbon chains determine whether they are saturated and how healthy or unhealthy they are.

Edible oils, which are important for human health, can be divided into three groups: saturated, monounsaturated and polyunsaturated fats.

  • Saturated fats are solid at room temperature; To illustrate this group, margarine is the best example of commonly eaten saturated fats.
  • Monounsaturated fats are liquid at room temperature;this group begins to solidify in the refrigerator. As an example, olive oil and peanut oil can be the best examples.
  • Polyunsaturated fats remain liquid at room temperature or when cooled. These include canola, sunflower, and walnut oil.

Saturated fats are often thought to be unhealthy because saturated fats can cause higher levels of cholesterol and heart disease.For this reason,monounsaturated and polyunsaturated fats are the best choices in terms of general human health.

In addition to these considerations, it may be useful to know that some fats provide important nutrients.For example:

  • Olive oil,an example of monounsaturated fats, is a load of antioxidants that can contribute to heart health.
  • Walnut oil contains Omega 3 oils that can contribute to lowering cholesterol.
